Tomato soup – Peel tomatoes and chop them. Then blend until really smooth. You can sieve if you prefer to remove the pips. Add fresh herbs such as basil, oregano and thyme.
Hummus and sprouts – Make your own hummus by bending sesame seeds and chick peas with garlic and lemon juice. The quantities will depend on your taste. Mix with sprouted beans to make a really healthy and tasty dish.
Sweet salad – Chop up apple and put into a mix of lemon juice and water to stop it going brown. Meanwhile chop some fresh walnuts. Mix these with the apple and add raisins for a really sweet but delicious salad.
Cucumber ‘sandwiches‘ – Obviously bread isn’t a raw food and that isn’t how we make the sandwich in this dish. Chop cucumber into thick round shapes and dry off a little. Then spread on some peanut butter (if the shop bought variety isn’t raw then you can make your own by grinding your own nuts). Sandwich with another cucumber piece.
These are just a few ideas for raw diet lunch meals that are easy to prepare and nutritious and satisfying.
